The original Waldorf Salad was created by the chef of the famed New York City hotel in 1893. This updated version replaces the mayonaise with goat cheese. The best part of goat cheese is the health benefits. It contains 30% less fat and 20% less calories and cholesterol than cow's milk cheeses. This recipe calls for Chavrie® goat cheese, which is all-natural, gluten-free and is considered to be easily digestible for those that are lactose intolerant. Goat cheese is very versatile and can be substituted for sour cream, cream cheese or mascarpone, or as in this case, mayonaise.   It adds wonderful flavor and creaminess without the fat.  

 

Ingredients

2 ea. Red Delicious apples
1 ea. Stalk of celery
½ tsp. Lemon juice
1 pkg. 5.3oz. Chavrie® Pyramid
½ cup Walnut pieces

Instructions

Core and dice apples

Dice celery

Mix apples, celery and lemon juice with Chavrie®

Serve on a bed of lettuce and top with walnut pieces

Makes 4 servings.
