Recipe by Claude Chassagne, chef and food consultant Ingredients: Croutons: Tofu Grenobloise: Sauce: Directions: Croutons: Remove crust from bread. Cut into small-sized cubes. Sauté with butter over medium heat until brown and crispy on all sides. Slice Tofu in half lengthwise then cut into 8 pieces. Coat Tofu with flour. Heat 1 ½ Tbsp butter over medium heat until butter melts, being careful not to burn. Add Tofu and cook for 3 minutes. Add remaining ½ Tbsp butter and turn Tofu. Cook for 3 more minutes. Set aside. Heat 2 Tbsp butter over medium heat until butter melts, being careful not to burn. Add capers, lemon juice and vegetable stock. Cook for one minute. Add lemon segments and croutons, tossing a few times to warm. Add parsley. Pour sauce over Tofu. Garnish with cherry tomatoes. Makes 4 servings. Time: approximately 20 minutes.
