Seared Scallops Over Mixed Greens Specaialty Salad with Barrel Aged Balsamic Vinegar

A deliciously healthy, fresh and simple to prepare salad.  Making this recipe really easy is the use of olive oil and vinegar "misters". The Gourmè Mist products are available in most states at leading supermarkets, Whole Foods and other natural health stores.  They are expected to be national by end of summer.  The misters, contain olive oil from the Mediterranean -- imported from either Spain or Italy -- and are priced at $7.99 each. SCALLOPS Ingredients:

½ pound sea scallops
1 cup flour
1 whole lemon (juice)
1 Gourmè Mist Extra Virgin Olive Oil Mister
Salt and pepper
Season salt

SALAD Ingredients:

1 bag mixed green salad mix or choose fresh, locally, grown salad greens
1 cup fresh raspberries
1 Gourmè Mist Barrel Barrel Aged Balsamic Vinegar Mister
½ cup raisins
½ cup mandarin oranges

PREPARATION:

Toss all salad ingredients together and spray with Gourmè Mist Barrel Aged Balsamic Vinegar.

Divide between 4 plates.

Spray frying pan with Gourmè Mist Extra Virgin Olive Oil, turn pan on medium heat.

Add all seasonings to flour, mix well.

Dust top and bottom of scallops.

Sear scallops, 1 minute each side.

Add lemon juice and place in 350 degree oven for 5-7 minutes.

Top salad with scallops.

Makes 4 servings.
